Portsmouth Restaurant Report Card for September 2022

The information for the Restaurant Report Card comes from the Portsmouth Health Department. The results are in random order and not “ranked”. Not all restaurants are inspected every month. Health Code violations are separated into “Critical” and “Non-Critical”.

This report is not intended to besmirch any local business. Instead, we hope this is a learning tool for all food service workers and managers. Along with informing the public, please use this information to improve your knowledge and abilities in your careers. As my Grandpa said, many times, “Don’t let the same dog bite you twice”. New mistakes are expected. Don’t get caught up in a cycle of the same mistakes.

Observed cutting boards with a rough surface at the prep station across from the stove in main kitchen. Observed cutting board with a rough surface at the salad holding station in the Starbucks.

Observed debris build up on dicer/fry maker by 2 compartment sink. Observed debris build up on oil dispenser at deep frying station for french fries (This violation was corrected during inspection).

Observed ice build up around piping in walk-in freezer containing bread. Observed standing water in floor under dishwashing station.

Critical *CRITICAL VIOLATION* Observed blackened debris build up on inside of ice machine located in corner of kitchen. Corrective Action: All food contact equipment should be clean to sight and touch. Correct immediately.

Observed the spring in disrepair on spraying nozzle of sink located near automatic dish washer. The spring was allowing the nozzle to dip below the rim of the sink.

Observed broken wall trim tiles on the inside of the walk-in freezer beside the door.

Repeat Corrected During Inspection Observed multiple bottles throughout the facility containing sauces or water without proper labeling of common name.

Corrected During Inspection Observed a container of egg rolls uncovered in the walk-in refrigerator. Observed recently deep fried chicken laying out uncovered while cooling.

Observed debris build up on the hood system above the deep fryers and stove area. Observed debris build up on cutting board that was being used as a shelf. Observed debris build up on the water dispensers on the stove. Observed debris build up on shelf above the three compartment sink.

Observed debris build up on the floors in hard to reach places throughout the facility.

Observed rust build up on racks above flour containers in back storage. Observed rust build up on racks in the walk-in refrigerator. Observed rust build up on floor of walk-in refrigerator.

Observed dust build up on the vents of the walk-in refrigerator.

Note: A follow up inspection was conducted 2 days later. The result of that inspection was 0 critical & 5 non-critical violations.

Critical *CRITICAL VIOLATION* Observed minimal debris build up on the inside of the large ice maker by prep station. Corrective Action: All food contact surfaces should be clean to sight and touch. Correct immediately. PIC did state that the machine gets cleaned once a month and within the next week it is due for a cleaning.
